Cheese Cupcakes

By Ruth Ezra
Chicago, Illinois

This is one of my favorite muffins. Once cooled, I tasted one and I consumed one more. It was that yummylicious, especially when fresh out from my own kitchen oven!

Had hubby taste as well. His reaction was..."Hmmm, that's good!" I won’t tell you how much he consumed!

Ingredients: cheese cupcakes jan 21
1 stick butter, softened
2 eggs
1 can condensed milk
1 1/2 all purpose flour
1/2 tsp baking powder
1 tsp hazelnut extract
1 pack finely grated cheddar cheese

Preheat oven to 350 ° F

Spray muffin pan with butter, set aside.

Mix flour and baking powder well in a bowl.

Beat eggs and add with your butter & hazelnut extract.
Mix with the dry ingredients.
Add cheddar cheese to the batter and blend well.
Pour batter into the muffin cups, just enough for 12.

Bake for 30-40 or till golden brown.
Transfer to cooling rack and completely cool.
